Position Summary Morii Restaurant Outlet Manager (Cape Town)– responsible for jointly managing our busy fine dining restaurant and ensuring every guest receives personalised attention. Achieve operational profitability by driving sales targets, managing costs and contributing to menu planning and promotions.
Responsibilities
Drive sales and manage operational profitability.
Contribute to the planning and promotion of food and beverage menu offerings.
Maintain food and beverage service standards.
Conduct regular training for staff on guest service, menu, sales and standards.
Lead and develop teams, fostering teamwork and accountability.
Manage staff processes: presentation, recruitment, performance, conduct.
Oversee daily restaurant operations: bookings, stock ordering&control, preparation, cleaning and hygiene protocols, service, and cash ups.
Operate shift work flexibly and use own transport.
Maintain professional appearance and strong verbal and written communication skills.
Leverage extensive knowledge of food, cocktails, wine and spirits.
Lead effectively in the local hospitality landscape, driving financial management and sales.
Qualifications
Matric Certificate.
Qualification from a recognised South African or International Educational Institution.
Certificates: Cape Wine Academy, WSET level 2 or 3, Cocktail Bar courses.
Experience in a Sommelier role or equivalent with a strong wine and spirit background.
Fine Dining Restaurant experience and food knowledge.
Minimum 3 years in a similar role managing large teams.
Background using technology such as micros/speed point machines and MS 365.
