Our client has a vacancy for a Sweet/Confectionery Maker in their Manufacturing Plant. In their business, confectioners are the lifeblood of their company. Employee Duties & Responsibilities

• Mixes and cooks candy ingredients by following, modifying, or formulating recipes to produce products of specified flavor, texture, and color.
• Cook ingredients at specified temperatures in open-fire or steam-jacketed kettles or in batch or continuous pressure cookers.
• Casts candy by hand, using molds & funnel, or tends machine that casts candy in starch or rubber molds.
• Spreads candy onto cooling heating slabs.
• Kneads and machine-pulls candy.
• Spins or rolls candy into strips ready for cutting.
• Examines, feels, and tastes products to evaluate color, texture, and flavor.
• Adds ingredients or modifies cooking forming operations as needed.
• Assisting with special projects such as holiday gift baskets

Minimum requirements and attributes

• Grade 12
• Formal culinary certification preferred
• 1-2 years experience in a similar role where the responsibility was mainly sweet making or confectionary in a manufacturing / industrial kitchen environment
• Basic analytical and numeracy skills (must be able to do calculations and mix based on recipes, etc.)
• General knowledge of food safety
• Understanding of heating confections according to recipe specifications and following orders
• Excellent baking and cooking experience
• Steady hands
• Strong attention to detail
• Ability to lift 20kg items
• Ability to stand for long periods
• Ability to accurately apply icings and glazes to confections
